The Tao of Tea
Like the Tao, the art of tea is universal. We began our work serving as a connecting thread for tea culture in 1997. Practicing this art on a daily basis in our teahouses in Portland, Oregon, we are a group of tea enthusiasts from different backgrounds and cultures. We travel, learn, take delight, and seek to offer pure leaf teas with great flavor, artistry and soul.
Origin - Fujian, China
Also known as 'Bai Mudan', White Peony is a popular white tea of Fujian.
White Tea
White teas are made only from the newly sprouted buds and young leaves of the tea plant. The leaf hair or 'down' on these leaves provides a honey texture to the brew.
Fujian
Fujian Province is situated along China's southeastern coast. Fujian's subtropical, marine climate is especially conducive to tea cultivation. The province has a 1,600 year history with tea. The earliest written record of tea production in Fujian is kept on a stone tablet at the 'Lian Hua Feng' (Lotus Peak) in Nan'an County.
Season
White Peony is made in early summer. This is the optimal time when leaves have their distinct white hair characteristic of white teas.
Flavor Profile
Delicate, herbaceous, autumnal aroma with a very smooth, sweet, nutty flavor.

Brew two teaspoons of leaf in eight ounces of pure spring water at 175ºF for four minutes. Provides at least two infusions.
