You will need:

- 2 eggs
- 1/4 cup milk
- 2 Tbsp butter, melted
Paleo preparation
- 2 eggs
- 1/4 cup nut-based milk or water
- 2 tbsp ghee or oil
Instructions
Heat oven to 325F. Grease or spray muffin tin with oil or butter.
Whisk together eggs, milk/water, oil/butter/ghee, and mix in a large bowl until just combined, scraping sides of bowl as needed. Fill each muffin tin 1/2 full with batter.
Bake for 17 to 23 minutes or until top springs back when touched.
