Lemon balm is a lemon scented member of the mint family. Native to southern Europe, it is a perennial plant that develops many branches and grows about two feet tall. The leaves are two to three inches long, somewhat oval and almost heart shaped. Small flowers appear in late spring.

Lemon balm makes an excellent herbal beverage, both hot and iced. It blends nicely with other herbs such as spearmint and chamomile. Lemon Balm can be used as a flavoring in desserts like ice cream. Pairs well with fruit dishes or candies.
