The base of this classic green sauce is the tomatillo, a vine-ripened little green tomato that is very popular in Mexican cooking. Our recipe blends in cilantro and a little chili to give it a real kick. It is a wonderful accompaniment to all grilled meats, fish and poultry, and we especially love it served with enchiladas.
