Tamari - Organic, U.S.
Often referred to as wheat-free soy sauce, it is quick fermented by raising temperatures of koji inoculated soybeans that are brewed for six months. Tamari was originally the liquid produced in making miso. Today, it is mash brewed as a sauce. Tamari's flavor is similar to miso and it is mainly used by manufacturers in Japan. Shoyu is a condiment and for kitchen cooking. Koji-made soyfoods are awesome.
